What Are Pralines?

A praline is a confection made from whole or ground nuts and sugar syrup. The word is also used to refer to a chocolate cookie with ground nut powder.

Pralines come in several forms, depending on where they are made. Belgian pralines have a hard chocolate outer layer and a softer filling that is sometimes liquid. French pralines are made from almonds and caramelized sugar. American pralines are softer and creamier because they are made with milk or cream. American pralines look like fudge.

The first pralines were made in France in the 17th century. French settlers later introduced pralines to Louisiana. In the 1800s, chefs in New Orleans began using pecans instead of almonds and adding cream for a thicker texture.
